Mashed Tofu with sharon fruit and date

The dressing of miso & tahini makes the plain tofu flavour rich, and the sharon fruit & date give the rich tofu crispness and sweetness. I recommend a sharon should be a crispy one. 

Ingredients
½ block of tofu (about 150g)
1 sharon fruit cut into 1-㎝ squares
2 dates finely sliced

For dressing
1 tablespoon miso
½ teaspoon tahini

Directions
1. Draw off the water of tofu
Wrap up the tofu with layers of paper towels and place a weight on the tofu to draw off the water. Put it in the fridge overnight.

2. Make tofu paste
Add the tofu and the miso and tahini into the blender and process until the paste is smooth.

3. Mix together
Transfer the tofu paste into a small bowl and add the cut sharon fruit and the sliced dates. Leaving some sliced date for a garnish, Mixing them gently. Serve it into small bowls or cups, and put the rest of the date on top.
