Smoked Salmon Temari Sushi

‘Temari’ is a traditional hand ball in Japanese, which is normally wrapped around beautiful embroidery. We call a small sushi ball ‘temari sushi’.

Ingredients
200 g smoked salmon
sesame (optional)

Sushi rice
2 cups Japanese sushi rice (short-grain)
2 cups water

Sushi vinegar
3 tablespoons rice vinegar / white wine vinegar
2.5 tablespoons sugar
1 teaspoon salt

Directions
1.Prepare sushi rice
Put a sieve into a larger bowl and pour the rice in the sieve. Rinse the rice under running water gently with your fingers. Continue rinsing until water runs mostly clear, and drain well. In a pot add the rice and the water, and presoak for 20 minutes.

2. Boil the rice
Cover the pot with the lid and bring to a boil over medium heat. Once it comes to a boil, turn the heat to low and cook further for 10-13 minutes..

3. Cut the smoked salmon
While cooking the rice, cut the smoked salmon into roughly 5-cm squares.

4. Steam the rice
Turn the heat off, and let it steam for 10 minutes with the lid on.

5. Make sushi vinegar
In a small bowl, add the vinegar, the sugar and the salt and mix it well.
6. Make sushi rice
Transfer the cooked rice into a mixing bowl and pour the sushi vinegar all over the rice. Sprinkle the sesame (optional).
Gently mix the rice with a rice spatula (or wooden spatula etc) ; cut down vertically through the rice to avoid crushing the grains, and move the spatula across the bottom of the bowl and bring it back up.

7. Make sushi
Place about 15 cm square cling film on your palm, and put the salmon in the middle of your palm and a bite size rice on top. Wrap the salmon and rice in the cling film and twist the cling film to roll it into a small ball shape.
